My Approach to Wellness Through Food

Every family is different. My role is not simply to cook, but to understand your goals and thoughtfully create meals that support the life you want to create.

With a background in fine art, nutrition, and food science, I approach cooking as a form of intentional design. Before I think about recipes, I think about outcomes—whether that’s more energy, improved health, athletic performance, longevity, or bringing people together around the table.

Every menu is thoughtfully crafted around your lifestyle, preferences, and wellness goals. My culinary philosophy is rooted in whole, seasonal, organic, and non-GMO ingredients whenever possible. While my expertise is grounded in plant-based wellness cuisine, I thoughtfully accommodate a wide variety of dietary preferences, cultural traditions, and individual lifestyles.

Because exceptional meals begin with understanding the people they’re created for.



DESIGNING MEALS WITH PURPOSE

The following visual framework offers a glimpse into how I think about food. Over the years, I've developed these visual references by bringing together my experience as an artist, my work as a private chef, and my studies in nutrition and food science. Rather than relying solely on recipes, these visual guides help me think intentionally about the relationships between ingredients, cooking methods, and the outcomes each family hopes to achieve. They are not rules, meal plans, or dietary prescriptions. They are creative tools that help me make thoughtful decisions while honoring each family's unique goals, traditions, preferences, and way of life.

The four examples below represent only a small part of that visual framework.

DELICIOUS HEALTHY FOOD

I specialize in creating delicious meals that are healthy and make you feel great. Nothing else makes sense to me. Working with farmer market, organically grown ingredients, I use my creative background, knowledge of nutrition and years of experience working for high end clients as a private chef, to create fun, tasty meals, individually designed for people that have specific dietary needs, or people who just want to live a healthy life, and feel great after eating.

SPECIAL DIETS

I have years of experience cooking special diets for clients with specific dietary needs. Working directly with family doctors and nutritionists. Autism, weight loss, high blood pressure, atherosclerosis, diabetes, rotational diets and no oil, to name few. You can see more detailed info for specific diets here. I work within my clients dietary limitations, learn about their likes, dislikes and get to know them. Then I begin to design menus that will give them a similar experience to their old diet but with healthy ingredients. If the food tastes great then people will be more likely to stick with their new healthy diets.

CLEAR NUTRITION INFORMATION

I have a certificate on nutrition from Cornell University with an emphasis on Healthy Living. I also completed a certificate program specific to vegan nutrition at the C Thomas Campbell Institute for Nutritional Studies. There is so much misinformation about nutrition online. Its all designed to make people feel that their health will improve if they buy their nutritional supplement products, its not true. Nutrition is a lot simpler once you understand its basic principles.

WHY PLANT BASED?

All beings on his planet get their energy from the sun. Plants are the only beings that can capture this energy through photosynthesis. Imagine that, its a miracle! They store that energy and it gets released for our use when we eat plants and our bodies break them down. If our purpose for eating is to stay alive, then it makes sense to eat live things, like plants. Also, I believe that there is no way to separate animal suffering from the energy you are getting, from eating animal products. I visualize a future where we live harmoniously with all the animals on this beautiful planet.

Felipe Dupouy is a private chef based in Portland, Oregon. He has worked for several High end/celebrity clients including Robert Kirkman (creator of The Walking Dead) and Sean Parker (Napster, Facebook). He has advanced degrees in nutrition from Cornell University and has studied medicinal plants with many experts including Pascal Baudar, Professor Jay Adams from the University Of Southern California Pharmacology School and Angels Rose, Foraging expert from The  Pacific Northwest.
