01 — DEFINE THE OUTCOME
What are we trying to accomplish?
A healthier menu?
A new product?
A plant-based offering?
A dietary solution?
A better customer experience?
02 — UNDERSTAND THE LIMITATIONS
Ingredients, nutrition, budget, equipment, labor, production, dietary requirements, preferences, texture, shelf life, service style, or other practical considerations.
03 — DEVELOP
I explore ingredients, techniques, combinations, textures, flavors, and formats to find solutions that meet the desired outcome.
04 — TEST & REFINE
Ideas become food in the kitchen.
I test, adjust, compare, and refine until the result works—not just on paper, but on the plate.
05 — DELIVER
The final result can become a recipe, menu, meal program, product concept, or practical system that can actually be used.
FOOD PRODUCT DEVELOPMENT
The objective isn’t to imitate an ingredient. It is to understand the experience people are looking for—texture, structure, flavor, aroma, appearance, cooking behavior—and design a plant-based solution around it.
I develop plant-based foods from the ingredients up, exploring grains, legumes, vegetables, mushrooms, seeds, and other plant ingredients to create entirely new eating experiences.
SELECTED DEVELOPMENT WORK
A selection of projects exploring ingredients, texture, flavor, nutrition, preparation, and practical food production.
SAUCES
A sauce can change the entire experience of a dish. I develop sauces and culinary components that add flavor, moisture, contrast, richness, color, and nutritional value to a meal. Components can be designed to complement an existing dish, transform familiar ingredients, or make foods that someone may not normally enjoy more appealing.
HAVING FUN WITH FOOD
Food development should be creative, curious, and fun. I like to experiment with ingredients, textures, colors, shapes, cooking methods, and combinations to see what food can become. Sometimes that means developing a new burger or sauce. Sometimes it means turning a familiar ingredient into something completely unexpected. The process is about exploring, making, tasting, adjusting, and trying again—until an idea becomes something genuinely delicious. There are no rules about what an ingredient has to be.
FOOD TO GO
Good food, designed to go. I develop prepared meals, components, snacks, sauces, and other foods designed for packaging, transport, storage, and service beyond the kitchen. The goal is to create food that maintains its flavor, texture, appearance, and appeal after it leaves the kitchen.
Convenience doesn’t have to mean compromising on good food.
